Bone in Sirloin – 30 Days (400 gms) –

The bone in sirloin is our nod to tradition. We source the best local beef to hang in our climate controlled aging room for a minimum of 30 days. The dense flesh can cook incredibly quicky. We leave the bone on to help protect the precious flesh through the cooking process. We portion these steak between 350 – 450 gm.
