Tea smokes Duck Breast
These breast come from free range duck grown in the south west. They have been salted and dried before being very gently smoked at 30C. Start them skin side down in a cold pan. As the fat renders rack it off into a separate container for later. Once the breast has become plump turn and remvoe the pan from the heat. The residual heat will finish the cooking.
